Description

A quick and easy recipe for a creamy air fryer cheesecake that delivers on flavor and texture.

Ingredients

  • 200 g (7 oz) graham cracker crumbs or crushed cookies
  • 60 g (2.5 oz) unsalted butter, melted
  • 500 g (1 lb) plain cream cheese, at room temperature
  • 125 g (1/2 cup) caster sugar
  • 3 tablespoons (25 g) all-purpose flour
  • Zest of 1 lemon
  • 2 large eggs
  • 125 ml (1/2 cup) sour cream
  • 1 teaspoon pure vanilla extract

Instructions

  1. 1. Combine the crushed cookie crumbs with the melted butter until resembling wet sand.
  2. 2. Press into the bottom of a springform pan and preheat air fryer to 350°F (175°C) for 3 minutes.
  3. 3. Air fry crust for 5 minutes until golden brown.
  4. 4. Beat cream cheese until fluffy, then add flour and sugar, mixing until combined.
  5. 5. Add eggs one at a time, mixing smoothly after each.
  6. 6. Incorporate vanilla extract, sour cream, and lemon zest until creamy.
  7. 7. Pour filling over the crust and air fry at 340°F (170°C) for 10 minutes.
  8. 8. Reduce temperature to 230°F (110°C) and bake for another 20-30 minutes.
  9. 9. Let cool for 1 hour then refrigerate for at least 8 hours before serving.
