Crispy on the outside and gooey on the inside, these cheesy mashed potato balls are the perfect comfort food snack.
Ingredients
2 cups chilled and firm mashed potatoes
1 cup shredded mozzarella or cheddar cheese
1/2 cup grated Parmesan cheese
1 egg, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
1 cup breadcrumbs (panko or regular)

Instructions
1. Ensure your mashed potatoes are chilled and firm.
2. In a large bowl, combine mashed potatoes, shredded cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
3. Roll about 2 tablespoons of the mixture into balls to form 12-14 balls.
4. Coat each ball in breadcrumbs and press gently to form a neat shell.
5. Preheat air fryer to 375°F and spray the basket with cooking spray or drizzle olive oil. Place potato balls in the basket.
6. Air fry for 10-12 minutes, shaking the basket halfway, until golden brown and crispy. Let cool slightly before serving.
