Transform leftover mashed potatoes into crispy, cheesy balls. Perfect as an appetizer or snack.

Ingredients

  • 2 cups mashed potatoes (chilled and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  1. 1. Place chilled mashed potatoes in a large mixing bowl and stir in shredded mozzarella or cheddar cheese and grated Parmesan.
  2. 2. Add the beaten egg, garlic powder, onion powder, salt, and pepper; mix well until combined.
  3. 3. Scoop about two tablespoons of the mixture and roll into a ball; repeat until all mixture is shaped into balls.
  4. 4. Spread breadcrumbs on a shallow dish and roll each potato ball to coat evenly.
  5. 5. Preheat the air fryer to 375°F (190°C).
  6. 6. Lightly spray the air fryer basket with cooking spray or olive oil and place potato balls inside (not overcrowded).
  7. 7. Air fry for 10 to 12 minutes, flipping halfway, until golden brown and crispy.
  8. 8. Remove the potato balls and let cool for a minute before serving.
