Crispy air fryer falafel made with chickpeas, fresh herbs, and spices for a healthier take on this Middle Eastern classic.
Ingredients
1 cup dried chickpeas (soaked overnight)
1 small onion, chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon baking powder
Salt and pepper to taste

Instructions
1. Drain and rinse the soaked chickpeas.
2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Process until the mixture is coarse but well combined.
3. Form the mixture into small balls or patties.
4. Preheat the air fryer to 375°F (190°C).
5. Lightly spray the basket with olive oil and place the falafel inside, ensuring they are not touching.
6. Lightly spray the tops with olive oil.
7. Cook for 15-20 minutes, until golden brown and crispy, turning halfway through.
8. Serve warm in pita with your choice of toppings.
