Ingredients
150 grams ‘00’ flour
50 grams potato starch
200 grams apricot yogurt (plain yogurt works too)
3 large eggs
160 grams sugar
100 ml sunflower oil
1 teaspoon vanilla extract
Zest from one untreated lemon
1 packet baking powder
A pinch of salt

Instructions
1. Cream sugar and eggs together until light and fluffy.
2. Mix in yogurt, sunflower oil, vanilla extract, and lemon zest until combined.
3. In a separate bowl, whisk together flour, potato starch, baking powder, and salt.
4. Gently fold in the dry mix to the wet mix to maintain airiness.
5. Transfer mixture into well-buttered and floured cake pans.
6. Place one pan into the air fryer and set to cake mode at 160°C. Cook for 18 minutes.
7. Check for doneness; the cake is ready when a toothpick comes out clean.
