Description

Golden-brown croquettes with a buttery inside and a delightful crunch, perfect as a snack or appetizer.

Ingredients

  • 1½ to 2 lbs Russet potatoes
  • ¼ cup unsalted butter, cubed
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 3 tablespoons minced green onion or chives
  • ½ cup shredded mozzarella cheese
  • ⅓ cup all-purpose flour
  • 1 egg
  • ½ tablespoon water
  • ⅔ cup Panko breadcrumbs

Instructions

  1. 1. Preheat the air fryer to 400°F (200°C).
  2. 2. Scrub and poke holes in the potatoes, then cook in the air fryer for 45-60 minutes until fork-tender.
  3. 3. Remove and mash the potatoes, adding butter, garlic powder, onion powder, salt, pepper, green onion, and cheese.
  4. 4. Scoop the mixture into balls and freeze for 15-20 minutes.
  5. 5. Prepare a breading station with flour, egg wash, and breadcrumbs.
  6. 6. Bread each potato ball by rolling in flour, dipping in egg, and coating with breadcrumbs.
  7. 7. Air fry at 400°F for 5-7 minutes until golden and crispy.
  8. 8. Let cool slightly and serve with your favorite sauce.
