Ingredients
1 small red bell pepper, chopped
1/2 cup carrots, thinly sliced
1 small-medium red onion, diced
1 small zucchini, cut into slices
1 cup broccoli florets
1 cup cremini mushrooms, large ones halved or quartered
2 teaspoons olive oil
1 tablespoon balsamic vinegar
2 cloves garlic, minced
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
1 tablespoon grated parmesan cheese (optional)
Salt and ground black pepper, to taste

Instructions
1. Preheat your air fryer to its highest temperature setting for about 5 minutes.
2. In a large mixing bowl, toss together all prepared vegetables with olive oil, balsamic vinegar, minced garlic, garlic powder, Italian seasoning, salt, and pepper until well coated.
3. Carefully place the seasoned vegetables in the preheated air fryer basket. Avoid overcrowding; work in batches if needed.
4. Air fry at 390°F for about 7 to 8 minutes, shaking the basket halfway through. If using parmesan cheese, sprinkle it on halfway through cooking.
5. Continue cooking for another 3 to 8 minutes until the vegetables are tender and fragrant.
