Ingredients

  • 4 boneless pork chops
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 apples, cored and thinly sliced
  • 1/2 cup apple butter
  • 1/2 cup water or chicken broth
  • 2 tablespoons whole grain mustard
  • Salt and pepper, to taste
  • 1 sprig rosemary, optional
  • 3 sage leaves, optional

Instructions

  1. 1. Season the pork chops generously with salt and pepper on both sides. Pat the chops dry.
  2. 2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. 3. Add the pork chops and sear for 3-4 minutes per side until golden brown. Remove and tent with foil.
  4. 4. Add the remaining olive oil to the skillet. Sauté the onions and apples, along with optional herbs, for 4-5 minutes.
  5. 5. Whisk together the apple butter, water/chicken broth, and whole grain mustard in a bowl.
  6. 6. Pour the mixture into the skillet, bring to a simmer, and return the pork chops to the skillet.
  7. 7. Simmer for 5-7 minutes until the pork chops reach 145°F. Serve with sauce spooned over the top.
