Description
A creamy, cheesy casserole combining chicken, asparagus, and bacon in a comforting dish that’s easy to prepare.
Ingredients
1 pound boneless, skinless chicken breasts
1/2 pound bacon, chopped
1 pound fresh asparagus, trimmed and cut into pieces
4 cups diced potatoes
1 medium onion, diced
2 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon dried thyme
1 teaspoon paprika
1 cup shredded cheddar cheese

Instructions
1. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium-high heat, cook the bacon until crispy, about 6 to 8 minutes. Drain on a paper towel-lined plate, reserving the grease.
3. Add the diced onion to the bacon grease and sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
4. Pat the chicken breasts dry, season with salt and pepper, and sear in the skillet for about 3 minutes per side until golden brown.
5. Combine heavy cream and chicken broth in the skillet, whisk in thyme and paprika, and let simmer for 2 to 3 minutes until slightly thickened.
6. Layer half of the diced potatoes in the baking dish, season with salt and pepper, then add asparagus and half of the cooked bacon. Top with seared chicken and pour the creamy sauce over everything, then add remaining potatoes and bacon.
7. Sprinkle cheddar cheese over the top, cover with foil, and bake for 25 to 30 minutes. Remove foil and bake for an additional 15 to 20 minutes until golden brown.
