Juicy seasoned beef, smoky bacon, and melty cheddar stuffed into colorful bell peppers for a low-carb weeknight meal.

Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ¼ cup dill pickles, diced (optional)
  • Fresh parsley, for garnish

Instructions

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Cut the tops off the bell peppers and remove the seeds and membranes. Arrange them upright in a baking dish.
  3. 3. In a skillet over medium heat, cook ground beef with diced onion and minced garlic until browned and fragrant. Stir in Worcestershire sauce, salt, black pepper, and smoked paprika.
  4. 4. Remove skillet from heat and stir in crumbled bacon, shredded cheddar, and diced pickles (if using).
  5. 5. Spoon the cheesy meat mixture evenly into each prepared bell pepper, pressing it down to fill tightly.
  6. 6. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are soft and the cheese is bubbly.
  7. 7. Sprinkle with chopped fresh parsley and serve hot. Enjoy!
