Description
A delicious twist on the classic grilled cheese, featuring crispy bacon and sweet, caramelized onions between layers of cheddar and Gruyère cheese on toasted sourdough bread.
Ingredients
2 slices sourdough bread
2 slices cheddar cheese
2 slices Gruyère cheese
4 ounces bacon
1 cup sliced onions
1 tablespoon olive oil
2 tablespoons unsalted butter
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions
1. Heat the olive oil in a skillet over medium heat. Add the sliced onions and season with salt and pepper. Cook until golden brown and caramelized, about 15 minutes.
2. In the same skillet, cook the bacon over medium heat until crispy and golden brown, about 5–7 minutes. Transfer to a paper towel-lined plate.
3. Assemble the sandwich: layer a slice of cheddar cheese on one slice of bread, followed by bacon and caramelized onions. Top with another slice of cheddar cheese and the second slice of bread.
4. Spread 1 tablespoon of butter on the outside of each sandwich.
5. Preheat the skillet over medium heat. Cook the sandwich until golden brown and cheese is melted, about 4–5 minutes per side.
6. Remove from skillet, let cool for a minute, then slice in half and serve warm.
