Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 cups full-fat sour cream
  • 1 cup ranch dressing
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 1 cup crumbled turkey bacon
  • 1/4 cup chopped green onions

Instructions

  1. 1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. 2. Steam the cauliflower florets until tender, about 8–10 minutes. Drain thoroughly and transfer to a large mixing bowl.
  3. 3. In the bowl, combine the sour cream, ranch dressing, salt, and pepper. Fold until the cauliflower is evenly coated.
  4. 4. Transfer the mixture to the greased baking dish, spread into an even layer, and sprinkle half of the shredded cheddar over the top.
  5. 5. Scatter most of the crumbled turkey bacon on top, reserving a few tablespoons for finishing.
  6. 6. Bake for 20 minutes until the cheese is melted and bubbly. Broil for 1–2 minutes at the end if you like a browned top.
