Description

These chewy sugar cookies are soft in the center, slightly crisp on the edges, and coated in a delicate layer of sparkle from the rolling sugar.

Ingredients

  • 2 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/3 cup white sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/3 cup white sugar (for rolling)

Instructions

  1. 1. Preheat your oven to 350°F and line two cookie sheets with parchment paper.
  2. 2. Mix together the all-purpose flour, cornstarch, baking soda, and salt in a medium bowl.
  3. 3. In a large bowl, beat the unsalted butter and 1 1/3 cup of white sugar until light and fluffy.
  4. 4. Beat in the whole egg, egg yolk, vanilla extract, and almond extract until well combined.
  5. 5. Gradually mix the flour mixture into the butter-sugar mixture until just combined.
  6. 6. Pour the remaining 1/3 cup of white sugar onto a plate. Scoop the dough into 1-tablespoon balls, roll them in the sugar, and place them 2 inches apart on the prepared cookie sheets.
