Description

Soft brioche filled with silky vanilla custard and melted chocolate, perfect for brunch or a sweet treat.

Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 tablespoon salt
  • 0.88 ounce fresh yeast
  • 3 medium eggs
  • 7 tablespoons unsalted butter, softened
  • 2 cups whole milk
  • 1 vanilla pod, split
  • 4 large egg yolks
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 3.5 ounces mini chocolate chips
  • 1 egg, beaten (egg wash)
  • Simple syrup (equal parts boiling water and sugar)

Instructions

  1. 1. In the bowl of a stand mixer, combine the flour, sugar, salt, and yeast.
  2. 2. Add the eggs and knead for about 10 minutes until smooth.
  3. 3. Gradually incorporate the butter, kneading for an additional 15-20 minutes until sticky and elastic.
  4. 4. Cover the dough and let it rise in a warm spot for about 2 hours.
  5. 5. In a saucepan, combine milk, a bit of butter, and vanilla pod; warm over medium heat.
  6. 6. Whisk together egg yolks, sugar, and cornstarch in a separate bowl, tempering with warm milk.
  7. 7. Return to saucepan and cook, stirring, until thickened (3-5 minutes).
  8. 8. Remove vanilla pod, cool the custard in the refrigerator.
  9. 9. Roll the dough into a rectangle, spread custard, and sprinkle chocolate chips.
  10. 10. Fold the dough and cut into 8 pieces, place on a baking sheet, and let rise for another 2 hours.
  11. 11. Preheat oven to 350°F (175°C). Brush with egg wash.
  12. 12. Bake for 10-12 minutes until golden and custard is bubbling.
  13. 13. Brush with simple syrup and cool on a wire rack.
