Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 tablespoon salt
  • 0.88 ounces fresh yeast
  • 3 medium eggs
  • 7 tablespoons unsalted butter, softened
  • 2 cups whole milk
  • 1 vanilla pod, split
  • 4 large egg yolks
  • 1/4 cup sugar (for the custard)
  • 2 tablespoons cornstarch
  • 3.5 ounces mini chocolate chips
  • 1 egg, beaten (for egg wash)
  • Simple syrup (equal parts boiling water and sugar)

Instructions

  1. 1. In a stand mixer, combine flour, sugar, salt, and yeast. Mix briefly with a dough hook.
  2. 2. Add eggs and knead on medium-low for about 10 minutes until smooth.
  3. 3. Incorporate softened butter gradually, kneading for 15–20 minutes until sticky and elastic.
  4. 4. Cover dough and let rise in a warm spot for 2 hours until doubled in size.
  5. 5. For custard: In a saucepan, warm milk, butter, and vanilla pod over medium heat.
  6. 6. In a bowl, whisk egg yolks, sugar, and cornstarch. Gradually add warm milk, whisking constantly.
  7. 7. Return to heat and stir until custard thickens. Chill in the refrigerator.
  8. 8. Roll dough into a large rectangle, spread custard, and sprinkle with chocolate chips.
  9. 9. Fold dough, seal edges, and cut into 8 pieces. Place on baking sheet and let rise for 2 hours.
  10. 10. Preheat oven to 350°F (175°C) and brush tops with egg wash.
