Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup fresh cranberries
  • 1/2 cup walnuts (optional)

Instructions

  1. 1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. 2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well blended.
  3. 3. In a separate bowl, whisk together the orange zest, orange juice, eggs, and vegetable oil until smooth.
  4. 4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Avoid over-mixing to keep the loaf tender.
  5. 5. Fold in the fresh cranberries and walnuts (if using) until evenly distributed.
