Crispy on the outside, gooey and cheesy on the inside, these Baked Broccoli Cheese Balls make vegetables feel like a party.
Ingredients
2 cups broccoli florets, steamed until tender crisp and finely chopped
1 cup breadcrumbs (plain or Italian)
1½ cups shredded sharp cheddar cheese
⅓ cup grated Parmesan cheese
2 large eggs, beaten
2 tablespoons all-purpose flour
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste

Instructions
1. Preheat your oven to 400°F and line a baking sheet with parchment paper or lightly grease it with cooking spray.
2. Steam the broccoli florets until they’re tender crisp, then finely chop them until they resemble coarse rice.
3. In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, beaten eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated.
4. Roll the mixture into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each one.
5. Bake for 20-25 minutes or until golden brown. For an extra crispy finish, you can broil for 1-2 minutes.
