Ingredients

  • 4 Chicken thighs
  • 2 cups Mixed vegetables (bell peppers, zucchini, onions, carrots)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Honey
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. In a large baking dish, toss the mixed vegetables with olive oil, salt, and pepper.
  3. 3. Place the chicken thighs on top of the vegetables.
  4. 4. Bake in the preheated oven for about 30 minutes.
  5. 5. In a small bowl, mix honey with your choice of spices.
  6. 6. Brush the honey-spice mixture over the chicken thighs and continue baking for an additional 10-15 minutes or until the chicken is fully cooked and golden brown.
