Baked salmon fillets topped with a zesty lemon butter sauce, served with crispy roasted potatoes and steamed broccoli.
Ingredients
4 salmon fillets
4 medium potatoes, cubed
1 lb broccoli, trimmed
2 tbsp olive oil
2 tbsp butter
1 lemon (juiced and zested)
1 tsp garlic powder
Salt and pepper to taste
Dried thyme or rosemary (optional)

Instructions
1. Preheat your oven to 400°F (200°C).
2. Cube the potatoes, toss them in olive oil, garlic powder, salt, and pepper, then spread on a baking sheet and roast for 20 minutes.
3. Season the salmon fillets with salt, pepper, and optional herbs, then add them to the baking sheet with the potatoes and bake for an additional 12-15 minutes.
4. For the lemon butter sauce, melt butter in a saucepan, stir in lemon juice and zest, and keep warm.
5. Steam or boil the broccoli for 5 minutes until tender.
6. Serve the salmon topped with lemon butter sauce, alongside the roasted potatoes and broccoli.
