Ingredients
2 medium zucchinis, grated
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 large egg
Salt and pepper to taste

1. Preheat the oven to 400°F (200°C).
2. In a bowl, mix the grated zucchinis with salt and let them sit for about 10 minutes.
3. Squeeze out the excess water from the zucchinis to ensure your fritters hold together.
4. In a large mixing bowl, combine the squeezed zucchini with breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, and a sprinkle of salt and pepper.
5. Form small balls or patties and place them on a lined baking sheet.
