Ingredients

  • 2 medium zucchinis, grated
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 3 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for brushing)

Instructions

  1. 1. Preheat your oven to 200°C (400°F).
  2. 2. In a large bowl, combine grated zucchinis, breadcrumbs, Parmesan cheese, eggs, minced garlic, salt, and pepper.
  3. 3. Shape the mixture into small balls or patties.
  4. 4. Line a baking sheet with parchment paper.
  5. 5. Place the formed meatballs onto the baking sheet with space in between.
  6. 6. Brush the tops of the meatballs lightly with olive oil.
  7. 7. Bake for about 25 to 30 minutes, flipping them midway through.
  8. 8. Serve warm with your favorite sauce.
