Ingredients

  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. 1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. 2. Clean the mushrooms using a damp paper towel or soft brush; cut large ones in half.
  3. 3. Whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, black pepper, and red pepper flakes in a bowl.
  4. 4. Toss the cleaned mushrooms in the marinade and let sit for 5 minutes.
  5. 5. Spread the mushrooms in a single layer on the prepared baking sheet.
  6. 6. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until tender and brown.
  7. 7. Remove from the oven and garnish with fresh parsley. Serve warm.
