Description
Crispy fried chicken tossed in a sweet and spicy Bang Bang Sauce, perfect for any meal.
Ingredients
1 cup (232 g) mayonnaise
½ cup (132 g) Thai sweet chili sauce
1 teaspoon Sriracha (or more to taste)
2 tablespoons honey
1 ½ pounds boneless skinless chicken tenderloins
1 cup (245 g) buttermilk
¾ cup (94 g) all-purpose flour
½ cup (64 g) cornstarch
1 large egg (room temperature)
1 tablespoon Sriracha
½ teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon cayenne pepper (optional)
2 cups (216 g) panko breadcrumbs (plain)
Canola oil (for frying)
Parsley (chopped, for garnish)

Instructions
1. In a small bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey to create the Bang Bang Sauce. Set aside.
2. In a large bowl, soak the chicken tenderloins in buttermilk for at least 30 minutes.
3. In another bowl, combine flour, cornstarch, garlic powder, salt, black pepper, and cayenne pepper.
4. In a small bowl, beat the egg and add the extra Sriracha.
5. Remove chicken from buttermilk and dip each piece into the egg mixture, then coat in the flour mixture.
6. After coating, dip the chicken back into the egg mixture and then coat with panko breadcrumbs.
7. In a large frying pan, heat canola oil over medium heat. Fry the breaded chicken until golden brown and cooked through, about 3-4 minutes per side.
8. Once cooked, drain on paper towels and sprinkle with chopped parsley.
9. Serve with the prepared Bang Bang Sauce drizzled on top or as a dipping sauce on the side.
