Description

Crunchy, saucy salmon bites tossed in a creamy sweet-spicy bang bang sauce, perfect for weeknight dinners or party appetizers.

Ingredients

  • 1 lb fresh salmon (skinless, cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. 1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
  2. 2. Pat salmon cubes dry and toss with garlic powder, smoked paprika, salt, and black pepper.
  3. 3. Coat salmon cubes in panko breadcrumbs, pressing lightly to adhere.
  4. 4. Arrange salmon bites on a baking sheet or in the air fryer basket.
  5. 5. Bake for 10-12 minutes or air fry for 7-9 minutes until crispy and cooked through.
  6. 6. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice to make the sauce.
  7. 7. Assemble bowls with rice, shredded cabbage, avocado, carrots, green onions, and top with salmon bites and sauce.
  8. 8. Garnish with cilantro and sesame seeds, and serve immediately.
