Description

A hearty and comforting beef stew with a mix of seasonal winter vegetables, perfect for chilly evenings.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups winter vegetables (like parsnips and turnips)
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. 1. In a large pot, heat olive oil over medium heat.
  2. 2. Add cubed beef and brown it on all sides.
  3. 3. Remove beef and set aside.
  4. 4. In the same pot, add onion and garlic, cooking until softened.
  5. 5. Stir in tomato paste, thyme, and rosemary.
  6. 6. Return beef to the pot and add the broth.
  7. 7. Bring to a boil, then reduce heat to low and simmer for about 90 minutes.
  8. 8. Add carrots, potatoes, and winter vegetables.
  9. 9. Continue to simmer for an additional 30-45 minutes, or until vegetables are tender.
