Description
A cozy, rich tomato soup with browned beef and savory aromatics, perfect for chilly evenings.
Ingredients
1 lb ground beef
1 medium onion, finely chopped
2–3 cloves garlic, minced
1–2 tablespoons tomato paste
1 (14–28 oz) can crushed tomatoes
1 (14–15 oz) can diced tomatoes (with juices)
4 cups beef broth
1–2 teaspoons Italian seasoning
1/2–1 teaspoon smoked or sweet paprika
Optional: 1 teaspoon sugar
Optional: 1/2 cup heavy cream
Optional: cooked pasta, cooked rice, or hot sauce to serve
Salt and freshly ground black pepper to taste
Olive oil (if needed for sautéing)

Instructions
1. Prep your ingredients: chop onion, mince garlic, open cans, and measure seasonings.
2. Brown the beef in a pot over medium-high heat, breaking it into pieces and cooking for 6–8 minutes until well browned.
3. Cook the onion and garlic in the pot until softened, about 4–6 minutes. Stir in minced garlic for another 30–60 seconds.
4. Add tomato paste and cook for 1–2 minutes to deepen flavor.
5. Stir in crushed and diced tomatoes with their juices, then pour in the beef broth.
6. Add Italian seasoning, paprika, and optional sugar, bring to a simmer, and cook uncovered for 20–25 minutes.
7. If using, stir in cooked pasta or rice, and cream. Adjust thickness as desired.
8. Season to taste and serve hot with optional garnishes.
