Description

A warm and comforting soup featuring tender chicken, egg noodles, and fresh vegetables in a rich and creamy broth.

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. In a large pot, heat olive oil over medium heat.
  2. 2. Add onions, carrots, and celery, and sauté until soft.
  3. 3. Add garlic and cook for an additional minute.
  4. 4. Pour in chicken broth and bring to a boil.
  5. 5. Add the chicken breasts and thyme, and simmer for 20 minutes.
  6. 6. Remove the chicken, shred it, and return it to the pot.
  7. 7. Stir in the egg noodles and cook until tender, about 8 minutes.
  8. 8. Lower the heat and mix in the heavy cream, parsley, salt, and pepper.
  9. 9. Warm through and serve hot.
