Instructions
1. Bloom the yeast: In a small bowl, combine warm milk, yeast, and a tablespoon of brown sugar. Let sit for 5–10 minutes until foamy.
2. Mix the wet base: In a large bowl, whisk together melted butter, vanilla extract, eggs, and the remaining brown sugar. Add the foamy yeast mixture and stir to combine.
3. Make and knead the dough: Gradually add flour and salt. Use a dough hook to knead for about 8 minutes until smooth and elastic.
4. First rise: Place the dough in a greased bowl, cover, and let rise in a warm place for 60–90 minutes until doubled in size.
5. Prepare the filling: Mix melted butter and cookie butter until smooth. Combine brown sugar, crushed cookies, and cinnamon in another bowl.
6. Roll and fill: Roll the dough into a 12×18 inch rectangle. Spread the cookie butter mixture on the dough and sprinkle the sugar mixture on top.
7. Cut and form the rolls: Cut the rectangle into 12 strips, roll each into a spiral, and place in a greased baking pan.
8. Second rise: Cover and let rise for 30–45 minutes until puffy.
9. Optional cream pour and bake: Preheat the oven to 350°F. Pour heavy cream over the rolls and bake for 20–25 minutes until golden brown.
10. Make the frosting: Beat together cream cheese, butter, and cookie butter. Gradually add powdered sugar until fluffy.
11. Finish and serve: Spread frosting over warm rolls and let cool for 10–15 minutes before serving.
