Description

A vibrant and delicious stir fry featuring earthy mushrooms and crisp broccoli, perfect for a quick weeknight meal.

Ingredients

  • 2 tablespoons vegetable broth
  • 1 1/2 tablespoons light soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 lb broccoli (cut into bite-size florets)
  • Pinch of salt
  • 2 1/2 tablespoons peanut oil
  • 1/2 lb button mushrooms (sliced)
  • 4 dried Chinese chili peppers
  • 2 cloves garlic (minced)
  • 1 tablespoon minced ginger
  • 2 green onions (sliced)

Instructions

  1. 1. Mix the sauce ingredients in a small bowl and set aside.
  2. 2. Add the slurry ingredients in another bowl and stir to mix well.
  3. 3. Heat 1/4 cup water in a large skillet over medium-high heat and steam the broccoli for 1 minute.
  4. 4. Uncover the pan and stir until the broccoli is al dente, then transfer to a plate.
  5. 5. Wipe the pan clean, add 2 tablespoons oil, and sear the sliced mushrooms for about a minute without stirring.
  6. 6. Flip the mushrooms and stir occasionally for 2-3 minutes until browned.
  7. 7. Move the mushrooms aside and add the remaining oil, chilies, garlic, ginger, and green onions to the pan. Stir until fragrant.
  8. 8. Combine everything, add the steamed broccoli and the sauce, and stir to coat.
  9. 9. Stir in the cornstarch slurry and cook until thickened.
  10. 10. Transfer to a plate and serve hot over rice or as a side dish.
