Description

A creamy, hearty, and spicy Cajun chicken soup that brings the warm flavors of Louisiana to your table in about 30 minutes.

Ingredients

  • 1 lb tender chicken breast, diced
  • 1 tbsp Cajun seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Green onions for garnish

Instructions

  1. 1. Prep your mise en place: Dice chicken, chop onion, bell pepper, and mince garlic.
  2. 2. Heat a medium-sized pot over medium heat and add olive oil.
  3. 3. Add onion, garlic, and bell pepper; sauté until softened, about 5–7 minutes.
  4. 4. Stir in diced chicken and Cajun seasoning; cook until chicken is mostly cooked through, about 4–6 minutes.
  5. 5. Pour in chicken broth and simmer for 8–10 minutes to meld flavors.
  6. 6. Reduce heat to low; stir in heavy cream and warm through without boiling.
