Ingredients

  • 2 boneless skinless chicken breasts, diced
  • 1 1/2 tablespoon Cajun seasoning
  • Salt and black pepper to taste
  • 2 tablespoon olive oil
  • 20 ounces cheese tortellini, fresh or refrigerated
  • 2 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Cajun seasoning (extra kick, optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions (typically around 8 to 10 minutes) until they are al dente. Drain the pasta and set it aside.
  2. 2. Pat the diced chicken breasts dry with paper towels. Season the chicken with Cajun seasoning, salt, and black pepper. Toss to ensure even distribution.
  3. 3. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken pieces and cook for 5 to 7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
