Ingredients
12 ounces penne or rotini pasta
2 pounds chicken breasts, cubed
1 tablespoon Cajun seasoning
2 tablespoons olive oil
1 small onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
8 ounces cream cheese, softened
1 cup heavy cream
1 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon paprika
Salt and pepper to taste
Chopped parsley for garnish (optional)

Instructions
1. Preheat your oven to 375°F (190°C).
2. Bring a large pot of salted water to a boil and cook the penne or rotini pasta according to the package instructions until al dente. Drain and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and Cajun seasoning, cooking until browned and cooked through, about 5 to 7 minutes. Remove chicken and set aside.
4. Add diced onion, red bell pepper, and minced garlic to the skillet. Sauté for 3 to 4 minutes, until softened.
5. Add softened cream cheese, stirring until melted. Gradually pour in heavy cream and chicken broth, stirring continuously for a smooth sauce.
6. Stir in cheddar cheese, Parmesan, paprika, salt, and pepper, cooking until the cheese melts and sauce is velvety.
7. Return chicken to skillet and mix in drained pasta until well combined. Taste and adjust seasoning as necessary.
8. Transfer mixture to a greased 9×13 inch baking dish and bake for 20 to 25 minutes until golden and bubbly.
9. Remove from oven, let cool for a few minutes, garnish with parsley if desired, and serve hot.
