Ingredients
8 ounces fettuccine or penne pasta
1 tablespoon olive oil
1 pound smoked sausage, sliced
1 small onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
1 teaspoon Cajun seasoning
Salt and pepper to taste
1 cup shredded cheese (cheddar or a blend)
Green onions for garnish

Instructions
1. In a large pot, cook the pasta according to package instructions. Drain and set aside.
2. In the same pot, heat olive oil over medium heat. Add sliced sausage and cook until browned.
3. Add the diced onion and bell pepper, and sauté until softened.
4. Stir in minced garlic and cook for another minute.
5. Pour in the chicken broth and heavy cream. Stir in Cajun seasoning, salt, and pepper.
6. Bring to a simmer, then add the cooked pasta and shredded cheese. Mix until cheese is melted and everything is well combined.
7. Serve hot, garnished with chopped green onions.
