Description

Ingredients

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. 3. Drizzle the inside of the squash with olive oil, and season with salt and pepper.
  4. 4. Place the squash cut side down on a baking sheet and roast for about 25-30 minutes, or until the flesh is tender.
  5. 5. Meanwhile, heat a skillet over medium heat. Add olive oil and sliced onions; cook, stirring occasionally, until onions are caramelized, about 15-20 minutes.
  6. 6. Once the squash is cooked, use a fork to scrape the flesh into strands.
  7. 7. Combine the squash strands with the caramelized onions, season with more salt and pepper if desired, and toss to mix.
  8. 8. Serve warm, garnished with fresh herbs if using.
