Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. Partially cook the bacon until it begins to brown but remains pliable; then transfer to a paper towel-lined plate to cool.
  3. 3. Flatten a piece of biscuit dough into a round about 3–4 inches across.
  4. 4. Add a small amount of shredded cheddar (about 1 tablespoon) in the center and season lightly.
  5. 5. Seal the cheese by folding the dough around it and pinching seams to form a ball.
  6. 6. Wrap a partially cooked bacon strip around the dough ball and secure if necessary.
  7. 7. Arrange on a baking sheet lined with parchment or a silicone mat.
  8. 8. Brush each bomb with BBQ sauce and season with salt and pepper.
  9. 9. Bake for 15–20 minutes or until the bacon is crispy and the dough is cooked through.
  10. 10. Let rest for 2–3 minutes before serving warm.
