Ingredients

  • 2 slices bread
  • 1 large egg
  • ½ cup (2 oz) grated cheese (cheddar, pepper jack, or Gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt and black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. 1. Lightly toast the bread or use the broiler to lightly brown each side for 1 to 2 minutes.
  2. 2. Preheat oven to 400°F. For toaster oven, adjust cooking rack to bottom and select “BAKE”.
  3. 3. Crack the egg into a small bowl and beat it until yolk and white are fully combined.
  4. 4. Stir in grated cheese and chopped herbs. Season with salt and pepper.
  5. 5. Spread the egg and cheese mixture over bread slices, covering to the crusts. Sprinkle with cayenne if desired.
  6. 6. Bake for 10 to 12 minutes until egg and cheese are puffed, bubbly, and starting to brown.
  7. 7. For air fryer, preheat to 340°F, then air fry for 8 to 10 minutes until browned and cooked through.
