Description

Ingredients

  • 2 cups mashed potatoes (chilled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1/4 cup all-purpose flour

Instructions

  1. 1. In a large bowl, combine the chilled mashed potatoes, cheddar cheese, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. 2. If the mixture is too soft, chill it in the fridge for 10–15 minutes.
  3. 3. Roll about 1 tablespoon of the mixture into a ball; repeat with the remaining mixture.
  4. 4. Set up a breading station with flour, beaten egg, and panko breadcrumbs.
  5. 5. Coat each potato ball in flour, dip in egg, and roll in panko breadcrumbs.
  6. 6. Chill the breaded balls in the refrigerator for 15–30 minutes.
  7. 7. Preheat the air fryer to 375°F (190°C). Lightly spray the basket with oil.
  8. 8. Arrange potato balls in a single layer and spray the tops with oil.
  9. 9. Air fry for 10–12 minutes or until golden brown, shaking the basket halfway through.
  10. 10. Let cool for 1–2 minutes before serving.
