Quick and comforting cheesy pizza pockets that are perfect for meal prep and satisfy your pizza cravings.
Ingredients
1 pound pizza dough (ready made or homemade)
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup additional fillings (pepperoni, cooked sausage, or chopped veggies)
1 egg, beaten (for egg wash)
1/2 teaspoon Italian seasoning (optional)
1 tablespoon grated Parmesan cheese (optional for topping)

Instructions
1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
2. On a lightly floured surface, roll out the pizza dough and cut it into 8 rectangles.
3. On half of each dough piece, spread about 1 tablespoon of pizza sauce, sprinkle with mozzarella cheese, and add chosen fillings.
4. If using, sprinkle Italian seasoning over the fillings. Fold the dough over the filling to form a pocket and press the edges together with a fork to seal.
5. Brush the tops with beaten egg and sprinkle with grated Parmesan cheese.
6. Bake for 12-15 minutes until golden brown and the filling is hot.
7. Let them rest a few minutes, then serve hot with extra pizza sauce for dipping.
