Ingredients

  • 1 bag (32 oz) frozen tater tots
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. 1. Preheat the oven to 425°F (220°C).
  2. 2. Arrange the frozen tater tots in a muffin tin, pressing them down gently to form individual cups. Bake for 20 minutes or until golden and crispy.
  3. 3. While baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat, stir in taco seasoning and water as per packet instructions, and simmer for about 5 minutes.
  4. 4. Once the tater tot cups are out of the oven, spoon the seasoned meat mixture into each cup and top with shredded cheddar cheese. Bake for an additional 5 to 7 minutes until the cheese is melted and bubbly.
  5. 5. Let cool for a few minutes, then top with shredded lettuce, diced tomatoes, sour cream, sliced black olives, and cilantro if desired. Serve warm.
