Description

Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 3 cups sweet potatoes, cubed (about 2 medium potatoes)
  • 2 tablespoons taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

Instructions

  1. 1. In a large nonstick skillet, brown the ground beef and diced onions over medium heat for about 10 minutes, making sure to drain any excess fat.
  2. 2. Stir in the minced garlic, cubed sweet potatoes, taco seasoning, water, frozen corn, and diced poblano pepper. Cover the skillet and let it simmer for 12–15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
  3. 3. Once the sweet potatoes are cooked through, remove the lid and continue cooking over medium-low heat for 3-5 minutes to allow any remaining liquid to evaporate.
  4. 4. Sprinkle the shredded cheese over the top of the skillet, then cover briefly to allow the cheese to melt.
  5. 5. Garnish with fresh cilantro, creamy avocado, and a dollop of sour cream, if desired. Serve immediately.
