Description

A portable and satisfying riff on a classic Caesar salad wrapped in a tortilla, perfect for picnics and busy lunches.

Ingredients

  • 2 large flour tortillas or wraps
  • 1 cup cooked chicken breast (sliced or shredded)
  • 2 cups romaine lettuce (chopped)
  • ¼ cup Caesar dressing
  • ¼ cup grated Parmesan cheese
  • Croutons (optional, for added crunch)
  • Freshly ground black pepper (to taste)
  • Olive oil (optional, for grilling the wrap)

Instructions

  1. 1. Place cooked chicken in a bowl and slice or shred into bite-sized pieces.
  2. 2. Toss chopped romaine with Caesar dressing until coated, being careful not to make it soggy.
  3. 3. Add grated Parmesan cheese to the dressed romaine and toss gently.
  4. 4. Crush croutons lightly if using, to fit in the wrap.
  5. 5. Heat a dry skillet over medium heat and warm each tortilla for 15–20 seconds per side or microwave for 10–15 seconds wrapped in a damp paper towel.
  6. 6. Lay a warmed tortilla flat, arrange half of the dressed romaine in a line, top with half of the chicken, and add more Parmesan and croutons if desired.
  7. 7. Fold the bottom edge over the filling, fold sides inward, and roll tightly to seal.
  8. 8. Repeat with the second tortilla and remaining filling.
  9. 9. Optionally, brush the outside of the wraps with olive oil and grill on a preheated skillet or grill pan for 2–3 minutes per side until golden brown.
  10. 10. Slice the wraps in half and serve immediately with extra dressing or lemon wedges.
