Ingredients
2 cups cooked chicken, shredded
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) enchilada sauce
1 cup corn kernels
2 cups tortillas, cut into strips
2 cups shredded cheese (cheddar and Monterey Jack)
1 tbsp olive oil
1 tsp cumin
Salt and pepper to taste

Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine shredded chicken, black beans, corn, enchilada sauce, cumin, salt, and pepper.
In a greased 9x13 inch baking dish, layer half of the tortilla strips on the bottom.
Spread half of the chicken mixture over the tortillas, followed by a layer of cheese.
Repeat the layers, finishing with cheese on top.
Bake for 20-25 minutes until the cheese is bubbly and golden.
