Description

A comforting and flavorful Chicken Enchilada Casserole that's easy to make and perfect for family dinners.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 6 corn tortillas, cut into strips
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, enchilada sauce, cumin, chili powder, salt, and pepper.
  3. In a 9x13 inch baking dish, layer half of the tortilla strips at the bottom.
  4. Add half of the chicken mixture on top of the tortillas.
  5. Sprinkle with one cup of shredded cheese.
  6. Layer the remaining tortilla strips over the cheese, followed by the rest of the chicken mixture.
  7. Top with the remaining cheese.
  8. Cover with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Notes

  1. You can customize this recipe with your favorite veggies.
  2. For extra spice, consider adding jalapeños to the chicken mixture.
  3. Make sure not to skip the foil-covered baking step to prevent burning the cheese.
