Ingredients

  • 2 cups shredded cooked chicken
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, black beans, corn, enchilada sauce, cumin, chili powder, salt, and pepper.
  3. In a 9x13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
  4. Layer 4 corn tortillas over the mixture, followed by half of the remaining chicken mixture and a sprinkle of cheese.
  5. Add another layer of 4 tortillas and top with remaining chicken mixture and cheese.
  6. Cover with aluminum foil and bake for 20 minutes, then uncover and bake for another 10 minutes until the cheese is bubbly.
  7. Garnish with fresh cilantro before serving.

Notes

  1. Feel free to customize this casserole by adding your favorite vegetables or spices.
  2. You can also use shredded rotisserie chicken for convenience.
  3. This dish is great for leftovers!
