Description

Delicious and creamy chicken enchiladas that come together quickly and satisfy everyone. A perfect dish for potlucks or a cozy family dinner.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small flour or corn tortillas
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a large bowl, mix the shredded chicken with 1/2 cup of the enchilada sauce, half of the cheese, onion, garlic powder, cumin, salt, and pepper.
  3. 3. Place a few spoonfuls of the chicken mixture into each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  4. 4. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  5. 5. Bake for 20-25 minutes until the cheese is melted and bubbly.
  6. 6. Garnish with fresh cilantro if desired and serve.
