Ingredients
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon pepper
3 large eggs
¼ cup vegetable oil
4 chicken breasts, cut in half lengthwise
1 large lemon, sliced into thin rounds
1 cup low sodium chicken broth
½ cup dry white wine
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour
2 tablespoons unsalted butter
2 tablespoons chopped parsley (for garnish)

Instructions
1. In a shallow dish, mix the flour, salt, and pepper.
2. In another dish, beat the eggs.
3. Dip each piece of chicken first in the flour mixture, then in the beaten eggs.
4. Heat the vegetable oil in a large skillet over medium heat and fry the chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
5. In the same skillet, sauté the lemon slices until slightly caramelized.
6. Pour in chicken broth, white wine, and lemon juice; stir to combine.
7. Whisk in the tablespoon of flour and butter until the sauce thickens.
8. Return chicken to the skillet and simmer briefly to warm through.
