Description

Ingredients

  • 2 chicken breasts
  • 1 cup panko breadcrumbs
  • 1 egg, beaten
  • 1/2 cup flour
  • 2 cups medium-grain rice
  • 2 potatoes, chopped
  • 2 carrots, chopped
  • 3-4 tablespoons Japanese curry paste
  • Vegetable oil for frying
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. 1. Cook the rice according to package instructions.
  2. 2. Cut the chicken breasts into fillets, season with salt and pepper, dredge in flour, dip in beaten egg, and coat with panko breadcrumbs.
  3. 3. Heat vegetable oil in a frying pan over medium heat and fry the chicken until golden brown and cooked through.
  4. 4. In another pot, boil chopped potatoes and carrots until tender.
