Ingredients
8 lasagna noodles
2 cups cooked chicken, shredded
1 cup ricotta cheese
1 1/2 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
2 cups marinara sauce
1 egg
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste

Instructions
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions until al dente and set aside.
In a mixing bowl, combine shredded chicken, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Take a cooked lasagna noodle, fill it with the chicken mixture, and roll it up tightly.
Place the rolled noodles seam-side down in the baking dish.
Top with remaining marinara sauce and sprinkle with the remaining mozzarella cheese.
Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 5 minutes until cheese is bubbly and golden.
Notes
You can use store-bought rotisserie chicken to save time.
Feel free to add sautéed vegetables to the filling for added nutrition.
For a healthier option, try whole wheat lasagna noodles.
