Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish

Instructions

  1. 1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. 2. Stir in garlic and cook for 1 minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the cooked chicken, thyme, oregano, salt, and pepper. Then, reduce heat and simmer for 10 minutes.
  5. 5. Add the egg noodles and cook until tender, about 8-10 minutes.
  6. 6. Serve hot, garnished with fresh parsley.
