Description

A comforting classic Chicken Noodle Soup that warms your body and soul, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • 3 large chicken legs/thighs (with or without bone)
  • 5-6 scallions/spring onions
  • 1 inch ginger
  • 6 garlic cloves
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. 1. In a large pot, combine the chicken legs, scallions, ginger, garlic, chicken broth, and water. Bring to a boil.
  2. 2. Reduce heat and simmer for about 30 minutes, or until the chicken is cooked through.
  3. 3. Remove the chicken, shred the meat, and return it to the pot.
  4. 4. Add the egg noodles and cook according to package instructions.
  5. 5. Season with salt and pepper to taste.
